The High Performance Edge: The Trizor "Gothic Arch" shaped triple beveled edge is created by using the three successive stages. Stages 1 and 2 sharpen and hone the edge with Chef's Choice signature 100% diamond abrasives. Stage 3 uses advanced, flexible abrasive disks to polish and strop the edge to shaving sharp perfection. Stage 3 is also used to sharpen serrated knives; it sharpens, straightens and realigns dull bent teeth creating micro blades along the "teeth" of the edge.
